The Paleo Mom is totally right! The Instant Pot has been a total game changer the moment it entered my kitchen. This electric pressure cooker has to be my best kitchen investment ever, especially when cooking Paleo Autoimmune Protocol (AIP) meals as pressure cooking is such a convenient and simplified way of cooking. AIP Instant Pot recipes are well loved by my family.
Getting a new appliance in my kitchen meant experimenting and creating Instant Pot recipes that were AIP-compliant. Lots of them. I found myself thinking ‘Can I cook it in the Instant Pot?’ when creating AIP Instant Pot recipes. Sometimes I tried converting non-AIP recipes, and substitutions got confusing and frustrating. Some turned out well and others not quite! I’m certain you can relate if you are following the AIP! When gluten, grains, pseudo-grains, legumes, soy, nightshades, industrial vegetable oils, seed-based spices, dairy, eggs, and refined sugars are out of the equation, you need specific recipes and not ‘guesstimations’ and substitutions galore.
A community effort
So 37 hardworking and creative bloggers/ recipe developers from the AIP and healthy living community decided to come together under the guidance of Eileen Laird of Phoenix Helix (author of A Simple Guide to the Paleo Autoimmune Protocol) to bring to you the latest community e-cookbook, The Paleo AIP Instant Pot Cookbook! There are many Instant Pot cookbooks out there, but this is the only one with AIP Instant Pot recipes with recipes developed specifically for people on the Paleo Autoimmune Protocol.
I’m very excited to have contributed 6 of my recipes to The Paleo AIP Instant Pot Cookbook. There are 140 recipes in all, and run the gamut from appetizers to desserts (full list here)! All these time-saving recipes were created with the Instant Pot in mind, and totally compliant with the Paleo Autoimmune Protocol as defined in The Paleo Approach. More than half of the recipes are easily modified to Low-FODMAP, GAPS/SCD, and Coconut-Free Diets, with helpful charts provided.
Preview Recipe: Pork Vindaloo
As a contributor, I had the opportunity to go through the cookbook, and one of the recipes that appealed to me was the Pork Vindaloo recipe by Martine Partridge of Eat Heal Thrive. I made it for my family and it was an absolute success! We love bold-tasting foods and her recipe did not disappoint! For a sampler of what’s available in The Paleo AIP Instant Pot Cookbook, here’s the recipe (Thanks, Eileen and Martine):
- 2 pound boneless pork roast, trimmed and cut into 1-inch pieces
- 1 medium onion, diced
- 3 tablespoons apple cider vinegar
- 4 to 6 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 1 teaspoon honey
- 1 teaspoon ground turmeric
- 1 teaspoon sea salt
- 1⁄2 teaspoon ground cilantro
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried dill
- 1⁄2 teaspoon ground cinnamon
- 1⁄8 teaspoon ground cloves
- 1 cup bone broth
- 1⁄4 cup chopped fresh cilantro
- Place the pork in the Instant Pot® stainless steel insert. Add the onion, vinegar, garlic, ginger, honey, turmeric, salt, ground cilantro, basil, dill, cinnamon, and ground cloves. Mix well. Cover and place in the refrigerator to marinate for at least two hours.
- Remove the stainless steel insert from the refrigerator. Place back in the Instant Pot® and stir in the broth.
- Close and lock the lid. Press manual for high pressure. Set cooking time to 15 minutes. Once time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Stir in chopped cilantro and serve.
