Berry Kale Smoothie

Smoothie was on the menu for today’s breakfast but I had run out of bananas.  An avocado made a great substitute for thickening it up, along with some frozen wild blueberries.  I love putting baby kale in smoothies as there’s no need to remove the stem – great for a quick breakfast. Can’t wait for Summer to arrive!  That’s when we’ll be having more refreshing smoothies for sure!

Ingredients (Makes 4 cups)

  • 2 cups fresh strawberries
  • 1 cup frozen wild blueberries
  • 2 cups baby kale, packed
  • Flesh from 1 avocado
  • 2 cups coconut water

Method

  • Put everything into a blender and blend until smooth.   Enjoy!
