Hey everyone! I’m really excited to announce that my first AIP cookbook is out! It’s called The Little Cookbook of Gluten-free Waffles and is available as an e-book in PDF format. In the 60+ page cookbook, you will get more than 20 Paleo Autoimmune Protocol sweet or savoury recipes, such as Classic waffles, Sweet waffles (that taste like sticky date pudding!), Creamy Chicken & Waffles, Xian Bing (Chinese Hand Pies), Banana Bread Cookies and much more! For those who have bought it already, thank you so much for your support and I hope you will enjoy the recipes! If you wish to share photos of recipes you made on social media, don’t forget to use the hashtag #PaleoAIPWaffles .
I realise that many folks are interested in the book but do not own a waffle maker, so here’s a giveaway of a copy of my e-book plus a waffle maker as an added bonus! The version that I use is a flip-style Belgian waffle maker and is the Hamilton Beach 26030 Waffle Maker. What’s cool about this machine is that it has removable dishwasher-safe waffle plates for easy cleanup. The machine is pretty compact when turned on its side for storage. Having grown up eating classic thin waffles, I had always wanted a Belgian-style waffle maker to make thick waffles with deep indentations! So this machine pretty much fulfilled my requirements, and is pretty friendly on the wallet as well!
In my e-book, I gave some tips on what to look for when shopping for a waffle maker. Here are a couple more options to consider (disclaimer: I have not personally tried them):
Ceramic option: Oster CKSTWFBF10WC-ECO DuraCeramic Flip Waffle Maker
I think this is a great option if you prefer ceramic finish instead of the classic non-stick finish.
Square waffles: Breville Smart Waffle Pro
Breville products are great and I love how this waffle maker has 12 different settings to play around with for perfect waffles!
Multitasking machine: Cuisinart GR-4N 5-in-1 Griddler + Griddler Waffle Plates
This is a really good choice if you do not want to get a dedicated waffle maker! Was actually eyeing this but it was out of my budget.

Stove top waffle iron: NordicWare 15040 Cast Aluminum Stovetop Belgium Waffle Iron
If you want something really sleek and cordless, a stove top waffler is for you.
You can also look out on Craigslist or eBay for used or vintage waffle irons.
Now for the giveaway: If you would like to take part, please comment below and share what your favourite lazy Sunday breakfast is (like waffles!). No purchase is necessary! A winner will be chosen randomly on Wednesday, 02 December 2015. Entry for the e-book and waffle maker giveaway is only open to U.S. and Canadian residents, due to shipping costs. However, if you reside outside of these areas, fret not! You may also take part to stand a chance to win a copy of my e-book! Good luck!
