One of the positive aspects of following the Paleo Autoimmune Protocol (AIP) is the feeling of support in the AIP community. I would never have gotten so far without being able to share my feelings, recipes, and also communicate with other fellow AIP-ers, especially the AIP bloggers.
Eating on the AIP requires a lot of opening up of one’s mindset towards meals, and having community support allows one to expand their repertoire of AIP-friendly meals. It’s with this same spirit that has resulted in the fruition of the newest project for the AIP community – I’m happy to announce that 26 fantastic AIP bloggers have come together under the guidance of Eileen Laird, author of the site Phoenix Helix, to bring us a brand new cookbook dedicated to the one very common question asked when a person embarks on their AIP journey: ‘What’s for breakfast?’.
If you’re nodding your head in agreement, you’ll be glad to know that this cookbook will put an end to the times when you’re doing meal planning for the week and the breakfast slots always end up being the last to be penned in!
The cookbook ’85 Amazing AIP Breakfasts’ is a 114 page printable e-book aligned with The Paleo Approach featuring simple-to-create recipes covering a range of categories:
- Beverages
- Bowls
- Skillets
- Soups
- Patties
- Pancakes and other treats
That means that every recipe is fully AIP-compliant and there’s no need for you to figure out what ingredients to substitute or omit as they all yield delicious results! If you’re on additional dietary requirements such as low-FODMAPs. GAPs/ SCD, low-histamine or coconut-free, you would be glad to know that more than half of the recipes are modifiable.
I have contributed 3 recipes especially for this breakfast cookbook, one of which is a breakfast staple for many! Yes, this is herbal ‘coffee’, which is totally AIP-friendly!
I’m not into black coffee but I love the aroma of full-bodied coffee, and my husband is a total coffee aficionado! When I created this recipe I knew I had high standards to meet and told myself it would not go into the cookbook if it didn’t get his seal of approval. He not only enjoyed it, he actually told me he would cut down on his coffee intake and replace it with my herbal ‘coffee’ recipe. This coming from the guy who drinks his coffee black without sugar and used to down 12 mugs a day!
I’m excited to share this recipe as a sampler of what’s available in ’85 Amazing AIP Breakfasts’:
- 1 tablespoon roasted dandelion root
- 1 tablespoon roasted chicory root
- 1 tablespoon carob powder
- 1 date, pitted
- 3 cups water
- Combine all ingredients in a small saucepan and bring to a boil.
- Lower heat and allow the mixture to simmer for 5 minutes.
- Remove from heat, strain and serve.

Hi Vanessa! You can choose to omit the date if you don’t have any, it just provides a slightly sweet flavour to the “coffee”.

I’m starting AIP and I swear breakfast will be the biggest obstacle. I’m also asian so its been so great to find you doing an awesome job of AIP. I am still not convinced I can do it. I spend a lot of time as a result completely obsessed with food, thinking about it, whether its possible or not. I just can’t figure breakfast out. Growing up on rice porridge and then western eggs and toast, nothing AIP related seems to make sense for my morning taste buds.

Hi there! The easiest thing is to stop thinking of the first meal of the day as breakfast. So it’s more like ‘meal 1′. That, plus the determination to feel better. I think it’s seriously helpful! I grew up eating Asian pastries and such for breakfasts so I understand how you feel! Leftovers or batch-cooked meals make great first meals for the day. There’s also recipes for AIP pancakes and breakfast-y foods around, some of which are available in the ’85 Amazing Breakfasts’ ebook. Dora, but I want to be sure I get the right dandelion product. Does the dandelion package actually say roasted? Or does it just say “cut and sifted dandelion root?” I looove coffee. I remember as a teen getting up in the middle of the night to make myself a cup of the forbidden goodness. So abstaining from it has been killing me. Thanks!

I’ve tried both roasted and unroasted, and I think the roasted version is more aromatic. The unroasted version is a tad more medicinal. Hope that helps!

I tried this and it turned out awesome! complete with coconut milk! you are a lifesaver, Dora! thank you so much! In order to make pouring easier (and brewing too, I guess) I wonder if I would get as good results using a stovetop percolator…

I don’t see why not! So glad you enjoyed it! I like mine blended with coconut oil and gelatin, makes it so frothy and creamy.

Either one is fine, the red can (gelatin) gives it a bit more oomph but has a certain taste/ smell, and the green can (collagen – doesn’t gel) is completely tasteless.

Do you put the gelatin in the cup and pour the hot coffee brew over it? or do you add the gelatin directly to the brewing pot?

I simply stir it directly into my mug. You can experiment and see what works best for you!

Hi Sabrina, you can add an extra date or a bit more carob powder. You can absolutely add coconut milk! It makes it mellower. I like blending it with a splash of coconut milk and coconut oil to make a frothy latte-like drink!

Hi Karen, there is no published hard copy but what many people do is print it out and place it in a binder with sheet protectors or have it spiral bound.
