If you’re considering going on the Paleo Autoimmune Protocol (AIP) or have just started this year, you may feel like your socialising opportunities will be affected. Having meals out regularly with friends and/or family can be tricky to navigate at restaurants, especially with the need to eliminate many potentially inflammatory foods while on the AIP. One good way to continue enjoying meals together is to host a gathering at your own place, where you can be assured that the foods you prepare will be entirely safe for you to consume. I personally do that most of the time. You may go the classic route of preparing the whole meal as the host; although for a more informal approach, potlucks (where everyone contributes a dish) are another option. But how can a potluck be AIP-friendly? By turning it into a dinner club, whereby different members take on 1 – 2 assigned recipes to form a complete meal.
Sarah Ballantyne of The Paleo Mom has a fantastic e-book created together with the AIP bloggers community especially dedicated to dinner clubs, AIP-style. Titled ‘The Paleo Approach Dinner Club‘, this 178-page digital book features recipes for 14 complete meals (with at least 5 recipes per meal), plus helpful information on how to host a dinner club, prepared schedules, kid-friendly recipes, party game ideas and even handy printables of the recipes to distribute to assigned members of the dinner club. There’s also a helpful summary of The Paleo Approach, what to eat and what to avoid. It takes the hassle out of planning and searching for AIP recipes and allows you and your dinner club members to meet regularly, socialise and partake in good food and conversation, all of which are beneficial for healing while on the AIP.
Even if you’re not planning on hosting a dinner club on a regular basis, this e-book comes in handy as it is filled with more than 80 creative recipes, ranging from simple and quick dishes for busy weeknight dinners, to impressive meals lavish enough for a fancy party. Majority of the recipes found in The Paleo Approach Dinner Club e-book are exclusive to it, meaning that they are not available anywhere else. Here’s a sample recipe from the cookbook for Pineapple and Lychee Granita (by Sarah), which I know will please many, especially my readers from South East Asia:
- 2 pounds fresh lychee or rambutan
- 1 quart (about 1.5 pounds) fresh pineapple chunks
- 2 limes
- ¼ teaspoon salt
- Peel and pit the lychee. Zest the limes and reserve zest as a garnish, then cut the remaining peel off the limes. Add limes, lychee, salt and pineapple to the blender and blend until completely smooth.
- Pour puree onto a rimmed baking sheet or into a cake pan or lasagna pan and place in the freezer. After 1 hour, remove from the freezer and scrape and mash with a fork to make little ice crystals. Return to the freezer. After another hour, remove from freezer and mash a second time. Return to freezer. After a third hour, remove from the freezer and mash a final time. Store in the freezer until ready to serve.
